The perfect no worry cheesecake
Ingredients
- 1 pk tennis biscuits
- 100g butter, melted
- 450g cream cheese
- 1 can condensed milk
- 1/4 cup fresh lemon juice
- 1 tsp vanilla
Instructions
- Put the biscuits in a large resealable plastic bag and crush them with a rolling pin until very fine crumbs form.
- Pour crumbs into e medium bowl, stir in butter until well combined.
- Press the crumb mixture into a spring form cake pan, spreading 2-4cm up the side and press flat.
- Chill crust in freezer for at least 10 minutes.
- Meanwhile make the filling. Using a mixer set at medium speed, beat the cream cheese intill smooth. Add the condensed milk a little bit at a time. Add the lemon juice and vanilla.
- Pour the filling into the crust, smooth the top with a rubber spatula. Cover with plastic wrap and refrigerate untill set. Overnight preferrably.
Notes
You can all lemon jelly ontop for extra flavour.
