Chicken Pot Pie
NOTHING HITS HOME LIKE A DELICIOUS CHICKEN PIE
THIS ONE PACKED WITH FLAVOR AND READY IN JUST OVER AN HOUR
Ingredients
- 4 Large Chicken breast, cubed
- 1/4 cup Butter
- 1 large Onion chopped
- 3 Garlic cloves crushed
- 250g Mushrooms sliced
- 4 medium baby marrow / zucchini sliced up
- 3 large Carrots diced
- 1 tbsp Dijon mustard
- 1 tbsp Fresh thyme chopped up
- 1/3 cup Flour
- 1/3 cup White wine
- 2-3 cups Milk
Instructions
Preheat oven to 200C.
To make the filling:
In a pan cook the chicken and set aside
In a large sauté pan over medium heat, melt the butter. Add the onion, garlic, carrots and chicken. Sauté, stirring occasionally, give it about 4 minutes then add the mushrooms and zucchini, continue cooking until the carrots are just cooked, 8 to 10 minutes.
Add the flour and cook, stirring constantly, for about 2 minutes.
Add the white wine, let reduce then add milk, add salt and pepper to taste Bring to a boil, stirring with a wooden spoon and scraping the bottom and corners of the pan to incorporate the flour.
Simmer until thickened, a few minutes. Take off the heat, stir in the thyme, and chicken. Taste and adjust seasoning, if necessary.
To Assemble the pie:
at this point depending on the type of pie you aim to make you can put the filling in accordingly.
For a pot pie, put filling in a pie dish and cover with puff pastry
for individual pies, prep your dishes or baking tins ladle in the filling.
once done, place in oven and bake. Should bake for +- 30 minutes or till golden brown, if using different methods baking time will vary
